Healthy Meals for Dinner: A Dinner Recipe Your Family Can’t Resist

Chicken Stir Fry with Peanut Sauce

This dinner recipe is best when served with coconut-cilantro rice.

Ingredients

  • 1 pound chicken cuts
  • 2 teaspoons sesame oil
  • 2 cups broccoli
  • 1 large sliced bell pepper
  • ¼ cup coconut milk (light)
  • 2 tablespoons soy sauce (low sodium)
  • 2 tablespoons peanut butter (creamy type)
  • 2 teaspoons line rind, grated
  • 1 tablespoon Sriracha
  • 1 tablespoon lime juice
  • ¼ cup cashews (unsalted)
  • ¼ teaspoon cumin, ground
  • ¼ teaspoon ginger, ground

Directions

  • Heat a large skillet or wok over high heat.
  • Add one teaspoon of oil and swirl it to coat.
  • Add chicken, cooking each side for about one minute.
  • Remove chicken from the pan when done then cut into small pieces.
  • Add bell pepper and broccoli into pan and stir-fry for about four minutes.
  • Reduce heat to medium high.
  • Combine all the remaining ingredients in a small bowl, stirring in a whisking motion.
  • Combine coconut mixture and chicken into a pan.
  • Allow the mixture to cook for a period of thirty seconds.
  • Sprinkle evenly with cashews.
